It's a well known fact that during festivities, our diet and exercise schedules go for a toss. We usually indulge in all our favourite Diwali treats and pack on the pounds, which we tend to regret once the bright lights and colours fade away.
This Diwali, however, you could delight in these healthy yet delicious Matcha coconut ladoos. A guilt- free way to satisfy your sweet tooth.
INGREDIENTS
- 1 cup raw cashews
- 6 large dates ( enough to make 3/4th cup)
- 2 tbsp coconut butter (or nut butter of your choice)
- 2 tbsp coconut oil
- 2 tsp Tea Trunk Culinary Matcha
- A pinch of cinnamon and salt
- A dash of vanilla
- Shredded coconut for rolling
METHOD
- Soak dates in warm water for 5-10 minutes if they are dry, drain and proceed.
- Add the cashews to a food processor and pulse until coarsely ground.
- Add the remaining ingredients and process for 2-3 minutes (scraping down the sides of the food processor if necessary) until the ingredients start to come together. The mixture should hold its shape when pinched together between two fingers. You can add water one teaspoon at a time if your mixture is too dry.
- Gently roll the dough into 12 smooth balls and roll in shredded coconut.
- Store in the refrigerator and enjoy.
