It is no secret that we are in love with everything Matcha. So, you can imagine our excitement when we came across these Dark Chocolate Matcha Date Bars recipe from Denise at Little Market Kitchen packed with with the goodness of Matcha Green Tea. Sweetened with dates, these are the perfect paleo-friendly mid morning snack! Oh and they are vegan and gluten-free too. Want to know more? Here’s the recipe:

Ingredients:

Makes approximately 12 bars or 24 squares

  • 255 grams pitted dates (about 1 2/3 cup)
  • 1/3 Cup cocoa powder
  • 114 grams Almonds, chopped (about 2/3 cup)
  • 2 Tbsp Tea Trunk Matcha Green Tea
  • 2 Tbsp coconut butter or cacao butter
  • 1/3 cup coconut flakes
  • 2 Tbsp maple syrup

1- Combine all ingredients in food processor and blitz until completely combined. Your dough may form a ball, or it may form several clumps, depending on your food processor. Once all the ingredients are totally worked into one another (about 2 minutes), turn off food processor.

2- Deposit the contents of your food processor onto a piece of parchment paper and form into a lump. Using hands press the dough into a rectangle about 1 inch thick.

3- Wrap in saran or parchment paper and chill on a flat surface in your refrigerator at least 2 hours before cutting.

4-Cut into desired size of bars (or use a cookie cutter for fun shapes!). Lightly dust with a bit more Matcha powder. To store, place parchment paper between bars to keep from sticking and keep in the fridge.

Dates are an ancient remedy for blood sugar control plus a great source of fiber. Combined with the goodness of our Matcha, dark chocolate and maple, these bars have a sweet, caramel-like flavour which is sure to hit the spot when one is in need of a quick pick-me-up.
