Blue Pea Iced Tea

Blue pea flowers-Gujarat and West Bengal, India ; Green Tea-Darjeeling, India

Whole dried blue pea flowers, whole leaf green tea and bits of orange peels.

Taste notes are fresh and citrus with a smooth finish.

Store in the foil pouch in the tea tin or transfer to an airtight container, kept in cool dark place.If not consumed immediately teas should be stored in the refrigerator.

If storing in the refrigerator/ freezer, pack in small completely airtight packets or jars. Before use, wait for the tea to reach room temperature to prevent any condensation.

Hot Brew Method:
1. Brew tea with hot water as per standard procedure. Ratio is 2 gms per 200 ml of water.
2. Steep for 5-7 mins to make a strong brew. Let it cool to room temperature.
3. Refrigerate the tea concentrate.
Cold Brew Method :
1. Infuse tea in room temperature water. Ratio is 2 gms per 200 ml of water. Leave this infusion overnight.
2. Next morning strain the tea leaves and refrigerate the tea concentrate.

Much like green tea, blue pea tea is loaded with antioxidants. It does wonders for digestion, detox, beauty and as a brain booster. Blue pea flower, also known as Clitoria Ternatea is also used in Ayurvedic medicine. It lowers blood pressure and has anti-anxiety, anti-asthmatic and pain relieving properties.
